In 2012, Kenny and Kendra Howard fulfilled their dream of opening a Neapolitan-inspired pizzeria. They started Fireflour as a mobile restaurant and quickly expanded into a 800 square foot space in Downtown Bismarck. They jumped at the chance to expand when the adjacent storefront became available in the fall of 2013. With the additional space, Fireflour doubled their seating capacity and opened a craft coffee bar.

The name Fireflour consists of the two essential elements of Neapolitan pizza. The “fire” represents the wood fired oven and the “flour” represents the most important ingredient in the pizza dough. Our 2 1/2 ton wood fired oven was hand built in Naples, Italy and reaches blistering temperatures up to 900 degrees. The dough is made from scratch daily, fermenting for 48 hours before being placed into the oven for a 60 – 90 second bake. We emphasize hand-crafted, high quality ingredients and lovingly prepare them with labor intensive methods. Our fresh mozzarella is hand-stretched from Wisconsin curd and the housemade fennel sausage is made from Berkshire breed pork. Some of the other uncommon ingredients we prize include: Caputo 00 flour, Bianco DiNapoli organic plum tomatoes, La Quercia artisan meats, and local organic produce.

We’ve partnered with Dogwood Coffee based out of Minneapolis to bring craft coffee to Bismarck. Dogwood believes sourcing and roasting are critical components of the end cup, and as such the equipment and methodology used are not to be overlooked. Our menu is simple, yet refined, with single-origin pour-over offerings and espresso drinks crafted on our Synesso espresso machine.

We also have an extensive craft beer selection including limited draught offerings and a list of stand-out wines. Start your meal with one of our house salads, and finish it with some housemade gelati or sorbetti. In addition, we have various bakery offerings including the popular Saturday morning cinnamon caramel rolls. We’ve carefully developed our menu to create a gathering place for people to enjoy delightful, handmade food and drink.

Monday Night Suppers are the first Monday of the month (Oct – May). Reservations are accepted and appreciated. Please call 701-323-9000. Take-out also available. We will be closed from 11 am to 5 pm on Mondays in which we have a special supper menu. In addition, we will not be serving pizza during the evenings of the special menu.
